Easy Spanish Style Chicken

This Spanish-style chicken is an easy and delicious recipe that's perfect for a busy weeknight. The chicken is cooked in a sauce of tomato, garlic, white wine and spices, and served with rice or potatoes.

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into 2-inch pieces
  • 1 tablespoon olive oil
  • 1/2 onion chopped
  • 2 cloves of garlic, minced
  • 1/2 cup white wine
  • 1 can (15 ounces) chopped tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Rice or potatoes to serve

Instructions:

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chicken and cook, stirring occasionally, for 5 minutes, or until golden brown.
  3. Add the onion and garlic and cook, stirring occasionally, for 2 minutes, or until soft.
  4. Add the white wine and cook, stirring occasionally, for 1 minute.
  5. Add the chopped tomatoes, oregano, paprika, salt and pepper.
  6. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the chicken is cooked through.
  7. Serve with rice or potatoes.
