Poblano chili sauce

This poblano chili sauce is an easy and delicious recipe that is perfect to accompany tacos, burritos or any other Mexican dish. The sauce is made with roasted poblano chiles, onion, garlic and vinegar.

Ingredients:

  • 4 poblano chiles
  • 1/2 cup olive oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup red wine vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat the oven to 200 degrees Celsius.
  2. Roast the poblano peppers directly over the stove flame or in the oven for 10-15 minutes, or until the skin is completely charred.
  3. Place the poblano chiles in a plastic bag and seal it tightly. Let sit for 15 minutes to soften.
  4. Remove the skin from the poblano peppers and remove the seeds.
  5. In a large skillet, heat the olive oil over medium heat.
  6. Add the onion and garlic and cook, stirring occasionally, for 2 minutes, or until soft.
  7. Add the roasted poblano chiles, vinegar, salt and pepper.
  8. Bring to a boil, then reduce the heat and simmer for 10 minutes, or until the sauce thickens.
  9. Serve hot.

Tips:

  • For best result, use fresh poblano chiles.
  • Don't roast the poblano peppers too much, or they will become too tough.
  • You can add other vegetables to the sauce, such as carrots, peppers, or peas.
