Ingredients:
- 1 sheet of puff pastry, thawed
- 1/2 cup ricotta
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped onion
- 1/4 cup chopped mushrooms
- 1 beaten egg
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
Instructions:
- Preheat the oven to 200 degrees C.
- Line a 23cm tart tin with the puff pastry.
- In a large bowl, combine ricotta, parmesan cheese, onion, mushrooms, egg, salt and pepper.
- Pour ricotta mixture into prepared puff pastry.
- Bake for 25-30 minutes, or until the puff pastry is golden brown and the filling is firm.
Tips:
- For a deeper flavor, use shiitake or portobello mushrooms.
- For a vegetarian version, omit the egg.
- For a vegan version, use vegan ricotta and vegan parmesan cheese.
Presentation:
Serve the puff pastry and ricotta pie with mushrooms hot or cold. It can be enjoyed as a main dish or as an appetizer.

- If you make the puff pastry at home, make sure it is very cold before rolling it.
- For a creamier filling, you can add 1/4 cup heavy cream or milk.
- For a spicier filling, you can add 1/4 teaspoon garlic powder or onion powder.
- For a more flavorful filling, you can add 1/4 cup of shredded cheddar cheese or shredded mozzarella.
